Simple Sautéed Cabbage

Cabbage is not the most glamorous of vegetables. Everyone sings the praises of spinach and kale, lettuce wraps are fashioned out of romaine, fancy salads are based on arugula. Cabbage may not be as celebrated as the others, but it is delicious and versatile. A good cole slaw - I prefer the finely chopped, mayonnaise based type - is a fantastic side dish to almost anything. Stir fries are delicious with cabbage. Cabbage rolls are time consuming, but delicious. This recipe is very simple and can be easily adjusted to suit your desired amount. It was a favorite way to prepare it in our house and I think you will enjoy it, too.

Ingredients: cabbage, onion, salt, pepper, butter/oil

Step 1: Slice the cabbage in slender strips. Step 2: Slice the onion into strips. Step 3: Heat butter/oil over medium heat in a frying pan. Step 4: Add cabbage and onion to frying pan, season with salt and pepper, and cook, stirring occasionally, until desired tenderness.
