Twice Baked Potato Casserole


We love to talk about all of the downsides to social media, and, for sure, there are plenty. Feelings of anxiety, envy, rejection, and inadequacy swell when social media usage is unhealthy. However, there are some good things about social media. Connection across distance and community are excellent benefits. One of my favorite things to do on my social media accounts, both personally and as Stirring the Soul, is follow other food blogs. There are some amazing people making some fantastic food out there! Southern Living magazine has a wonderful community on Facebook and it was through this community that I learned about A Southern Soul. A Southern Soul shares some really fun recipes, and this one in particular caught my eye. We like potatoes around my house, and throwing cheese, bacon, and sour cream into the mix makes it all that more amazing! We still haven't gotten back to potluck season, but when we do, you will definitely want to bring this!


Ingredients: potatoes, parsley, black pepper, salt, milk, sour cream, butter, cheddar cheese, bacon

Step 1: Preheat oven to 350 degrees. Cut previously baked potatoes lengthwise and remove cooked potato from skin. Step 2: Combine cooked potato, parsley, pepper, salt, milk, sour cream, and butter in a large bowl and beat with mixer until fluffy. Step 3: Add half of the cheese and half of chopped bacon and mix with a spoon until combined. Step 4: Spread potato mixture evenly in a casserole dish. Top with remaining cheese and chopped bacon. Bake for 20 minutes. Step 5: Remove from oven and garnish with additional parsley, if desired. (I did not have any additional parsley when I made this, which I regret. It would have totally elevated the presentation!)

6 medium potatoes, baked

1/2 tablespoon parsley, plus more for garnish

1 teaspoon black pepper

1 1/2 teaspoon salt

1/3 cup milk

1/3 cup sour cream

4 tablespoons butter

1 cup shredded cheddar cheese, divided

5 strips cooked bacon, chopped & divided

Cut previously baked potatoes lengthwise and remove cooked potato from skin. Combine cooked potato, parsley, pepper, salt, milk, sour cream, and butter in a large bowl and beat with mixer until fluffy. Add half of the cheese and half of chopped bacon and mix with a spoon until combined. Spread potato mixture evenly in a casserole dish. Top with remaining cheese and chopped bacon. Bake for 20 minutes. Remove from oven and garnish with additional parsley, if desired.
